People who are pregnant, aged 60 or older or have a weakened immune system are more vulnerable to Listeria and should only eat thoroughly cooked Enoki mushrooms. For people in non-vulnerable populations who choose to eat raw Enoki mushrooms, try to choose the freshest product possible. Some products have date markings on the label that can help guide your decisions, such as a harvest date.
